Ingredients

    • 4 tbsp self-raising flour
    • 4 eggs
    • 4 tbsp sugar
    • 300 ml custard
    • approx. 500g of different berries
    • 135 g jelly cubes

Method

Separate the egg whites from the egg yolks. First, add 2 tablespoons of sugar to the egg whites and whip them until they form stiff peaks. Then, add 1 tablespoon of sugar to the egg yolks and whip them until they turn pale and creamy. Gently fold the whipped egg whites into the egg yolks. Gradually add the self-raising flour, one spoonful at a time, mixing carefully to avoid lumps and to keep the mixture light and airy.

Prepare a round ovenproof tin by greasing it with margarine and dusting it with flour to prevent the sponge cake from sticking. Pour the batter into the tin and bake for 20-25 minutes, or until golden brown. Let the cake cool completely.

You can use store-bought custard or make your own, but ensure it is thick. It’s best to keep the sponge in the baking tin while assembling the layers. Pour all of the cold custard over the cooled sponge to form the first layer. Arrange the berries on top of the custard. Pour the raspberry jelly over the berries (it’s advisable to let the jelly cool slightly so it doesn’t soak into the cake completely). Refrigerate for 4-5 hours until set.
